Ingredients

Instructions

  1. Prepare the sauce: In a bowl, whisk together balsamic vinegar, honey, 2 tablespoons oil, minced garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper to taste. Set this balsamic glaze aside.
  2. Make the tomato mozzarella mixture: In another bowl, combine the halved grape tomatoes, fresh mozzarella balls, and finely chopped basil. Season with salt and pepper to taste. Set this mixture aside.
  3. Preheat the oven: Set your oven to 400°F (200°C) to heat while you prepare the chicken.
  4. Brown the chicken: Heat 2 tablespoons of avocado oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts all over with kosher salt and fresh black pepper. When the oil is shimmering and the pan is hot, add the chicken in a single layer. Cook for 1-2 minutes per side until lightly golden brown.
