Ingredients
Wet Ingredients
- 1 cup almond milk, or plant milk of choice
- 4 oz cooked and peeled beet (about 1/2 cup when pureed or one small beet)
- 2 teaspoons apple cider vinegar
- 1/4 cup maple syrup
- 1 teaspoon vanilla bean paste
- 2 tablespoons melted coconut oil
Dry Ingredients
- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Prepare the Beet Mixture: In your blender, combine the plant milk, vanilla bean paste, maple syrup, cooked beet, and apple cider vinegar. Blend until smooth and the beet is completely pureed to create a vibrant pink batter base. Set aside.
- Sift Dry Ingredients: In a large bowl, sift together the white whole wheat flour, baking powder, cinnamon, and salt. Sifting is optional but helps make the waffles light and fluffy.
- Combine Wet and Dry: Pour the beet mixture from the blender into the bowl of dry ingredients. Add the melted coconut oil, then gently mix together until just combined. Be careful not to over mix as the batter will be thick and over mixing can make waffles tough.
- Heat Waffle Iron and Cook: Preheat your waffle iron. If necessary, lightly oil the plates to prevent sticking. Pour about 1/2 cup of batter onto the hot waffle iron, close the lid, and cook. Cooking time varies with waffle iron heat, but typically about 5-6 minutes. Waffles are done when the steam has completely stopped.
- Keep Waffles Warm: Once cooked, carefully remove waffles and place them on a baking sheet in a 200℉ oven to keep warm while you cook the rest of the batter.
- Serve and Enjoy: Serve warm topped with fresh berries, extra maple syrup, whipped coconut cream, or nut butter for extra indulgence.
- Storage: Allow any leftover waffles to cool completely before storing in an airtight container in the refrigerator for up to 4 days or freeze for up to 1 month.
Notes
- Using white whole wheat flour provides a balance of nutrition and a lighter texture than regular whole wheat flour.
- Sifting the dry ingredients is optional but recommended for fluffier waffles.
- Adjust cooking time based on how hot your waffle iron gets; the absence of steam is the best indicator that waffles are fully cooked.
- Leftover waffles can be reheated in a toaster or oven for crispiness.
- For a gluten-free option, substitute the flour with a gluten-free blend suitable for waffles.
- The apple cider vinegar reacts with baking powder to help the waffles rise and become fluffy despite the batter being thick.
