Biscoff Cookie Butter Muddy Buddies are a deliciously addictive snack combining crispy Chex cereal coated in a creamy blend of white chocolate, cookie butter, and butter, then dusted with powdered sugar, cinnamon, and crunchy Biscoff cookie pieces. This sweet treat offers a perfect balance of creamy, crunchy, and spicy flavors, ideal for parties, snacks, or festive occasions.

  • Total Time: 30 minutes
  • Yield: 12 servings

Ingredients

Chocolate Mixture

  • 2 cups (340 g) white chocolate chips
  • 1 1/4 cup (370 g) cookie butter
  • 16 tablespoons salted butter
  • 1 teaspoon vanilla bean paste

Cereal Mixture

  • 11 cups rice Chex or corn Chex (1, 12 ounce box)

Coating

  • 2 1/2 cups powdered sugar (divided)
  • 1/2 teaspoon cinnamon (divided)
  • 1 1/2 cups broken Biscoff cookies (divided)

Instructions

  1. Prepare Baking Sheets: Place a piece of parchment paper on 2 rimmed baking sheets and set aside for the finished muddy buddies to cool and set.
  2. Divide Coating Mixture: Evenly divide the powdered sugar, cinnamon, and Biscoff cookie pieces into two separate gallon-sized zipper-top bags—each getting about 1 1/4 cups powdered sugar, 1/4 teaspoon cinnamon, and 3/4 cup cookie pieces. Shake each bag to mix and set aside.
  3. Melt Chocolate Mixture: In a microwave-safe bowl, combine white chocolate chips, cookie butter, and salted butter. Microwave in 15-second increments, stirring between each interval, until fully melted and smooth but not overcooked. Stir in vanilla bean paste. Note that the mixture will be thicker and less smooth than traditional peanut butter-muddy buddy coatings due to the nature of cookie butter and white chocolate.
  4. Coat Cereal: Place the cereal in a very large mixing bowl and pour the chocolate mixture over it. Gently fold and lift the cereal using a rubber spatula to coat evenly without crushing the cereal pieces.
  5. Apply Powdered Sugar Coating: Split the coated cereal evenly between the two prepared bags of powdered sugar, cinnamon, and cookie pieces. Seal the bags and gently shake them, turning upside down to ensure all pieces are coated thoroughly.
  6. Cool and Store: Transfer the coated muddy buddies onto the prepared baking sheets, spreading them evenly and breaking up any clumps. Allow them to cool and set for 10-15 minutes. Once cooled, store in an airtight container or fresh zipper-top bags to maintain freshness.

Notes

  • Be gentle when stirring the coated cereal to avoid breaking or crushing the Chex pieces.
  • Use parchment paper on baking sheets to prevent sticking and simplify clean-up.
  • Cool the muddy buddies completely before storing to ensure the coating sets properly.
  • Feel free to use rice or corn Chex based on preference; both work well.
  • Vanilla bean paste adds a richer vanilla flavor but can be substituted with vanilla extract if needed.
