Instructions

  2. Mix the dry ingredients: In a large bowl, thoroughly whisk together the quick oats, oat flour, baking powder, cinnamon, and salt to evenly distribute the leavening and spices.
  3. Mix the wet ingredients: In a separate bowl, whisk the eggs, Greek yogurt, milk, melted butter, cane sugar, and vanilla bean paste together until the mixture is smooth and creamy.
  4. Combine wet and dry: Pour the wet mixture into the dry ingredients bowl, stirring gently just until no dry streaks remain. Take care not to overmix to keep the texture soft and tender.
  5. Fold in blueberries: Gently fold the fresh blueberries into the batter, reserving a small handful to scatter on top for an attractive finish, if desired.
