A traditional Brazilian cheese bread recipe that yields crispy, golden, chewy puffs filled with melted cheddar and Grana Padano cheese. Made with tapioca flour, this gluten-free treat is perfect for snacking or serving with breakfast and can be whipped up quickly with simple ingredients.

Ingredients

Dry Ingredients

  • 1 1/2 cups (180g) tapioca flour (also known as tapioca starch)
  • 1/2 tsp salt

Wet Ingredients

  • 2/3 cup (155ml) whole milk
  • 1/4 cup (60ml) avocado oil (or olive oil)
  • 1 large egg

Cheeses

  • 1/2 cup finely shredded (56g) medium or sharp cheddar (white or yellow)
  • 1/3 cup finely shredded (28g) Grana Padano (or parmesan cheese)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line an 18 by 13-inch baking sheet with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large heatproof mixing bowl, whisk together the tapioca starch and salt. Set aside.
  3. Heat Milk and Oil: In a saucepan, bring the whole milk and avocado oil to a simmer over medium heat.
  4. Mix Wet and Dry: Immediately pour the hot milk and oil mixture into the tapioca starch mixture. Stir vigorously with a wooden spoon until well combined. The mixture will be somewhat lumpy at this stage. Allow to cool for 5 minutes.
  5. Add Egg and Cheeses: Stir in the large egg using the wooden spoon or an electric mixer until fully incorporated. Then fold in the finely shredded cheddar and Grana Padano cheeses. The dough will be tacky but should hold its shape well.
  6. Shape Dough: Using a 1 1/2 tablespoon cookie scoop or two spoons, scoop out golf ball-sized portions of dough and place them on the prepared baking sheet, spacing them about 1 1/2 inches apart.
  7. Bake: Bake in the preheated oven for 15 to 18 minutes or until the exterior is golden brown and crisp. The centers will remain stretchy, chewy, and cheesy.
  8. Serve: Remove from the oven and allow to cool slightly before serving warm.

Notes

  • If your dough feels too runny or too thick, adjust the milk or tapioca flour slightly to achieve a tacky but moldable consistency.
  • Using avocado oil gives a subtle flavor, but olive oil can be substituted without affecting texture.
  • These cheese breads are best enjoyed fresh out of the oven while still warm and stretchy.
  • Leftovers can be reheated in the oven to restore crispness.
