These Breakfast Banana Bars are a wholesome and simple morning treat made with ripe bananas and gluten-free oats, lightly spiced with cinnamon. Perfect for a quick, nutritious start to your day, they are easy to prepare and bake, resulting in soft, chewy bars that are naturally sweet and gluten-free.

  • Total Time: 30 minutes
  • Yield: 10 bars

Ingredients

Main Ingredients

  • 6 ripe bananas
  • 400 g gluten free oats (roughly 4 cups)
  • 1 tsp cinnamon
  • 2 tbsp water

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (392°F) to ensure it’s ready for baking the bars.
  2. Mash the Bananas: In a large mixing bowl, peel the ripe bananas and mash them thoroughly using a fork until smooth.
  3. Combine Ingredients: Add the gluten-free oats, cinnamon, and water to the mashed bananas. Mix all ingredients together until well combined.
  4. Prepare the Baking Tin: Line a square baking tin with baking paper for easy removal and pour the banana oat mixture into the tin. Press the mixture down firmly using the back of a fork to compact it evenly.
  5. Bake the Bars: Place the tin in the preheated oven and bake for 20 to 25 minutes, until the bars are set and lightly golden on top.
  6. Cool and Slice: Remove the baking tin from the oven and let the bars cool for about 10 minutes. Once cooled, slice into 10 bars and serve.

Notes

  • Ensure bananas are very ripe for maximum natural sweetness.
  • Pressing the mixture firmly helps the bars hold together better after baking.
  • These bars can be stored in an airtight container for up to 3 days or frozen for longer storage.
  • Feel free to add nuts or dried fruits for extra texture and flavor.
  • Use gluten-free oats to keep the recipe gluten free.
