Ingredients

Steak Bites

  • 2 pounds skirt steak, cut into bite-size pieces (about ½” – ¾”)
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic or garlic powder
  • ⅔ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated onion or onion powder
  • ½ teaspoon crushed oregano
  • ½ teaspoon crushed thyme
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons butter, divided

Instructions

  1. Prepare the steak: Cut the skirt steak into bite-size pieces, approximately ½” to ¾” each. Place the pieces in a large bowl.
  2. Season the steak: Sprinkle the smoked paprika, granulated garlic, kosher salt, black pepper, granulated onion, oregano, thyme, and cayenne pepper over the steak pieces. Toss thoroughly to evenly coat all the meat with the seasoning blend.
  3. Heat the skillet: Place a heavy flat-bottomed stainless steel skillet over medium-high heat. Add 1 tablespoon of butter to the skillet and allow it to melt completely. Swirl the skillet so the melted butter coats the bottom evenly.
  4. Cook the steak bites in batches: Add about one-third of the seasoned steak pieces to the skillet in a single layer. Let them cook untouched for 1 minute, then use a large spatula to flip each piece and cook for an additional minute on the other side, achieving a nice sear.
  5. Remove the cooked bites: Use the spatula to transfer the cooked steak bites to a plate. Repeat the cooking process with the remaining steak pieces in two more batches, adding butter as needed.
  6. Finish with butter drippings: After all the steak bites are cooked and removed, add the remaining tablespoon of butter to the skillet and allow it to melt. Scrape up all the flavorful browned bits and drippings from the bottom of the skillet. Drizzle this melted butter mixture over the cooked steak bites for extra richness.
  7. Serve: Serve the Cajun steak bites immediately while hot, ideal as an appetizer or a protein-packed main dish.
