Ingredients
Caramelized Onions

- 250g of onions, sliced thinly
- 1 cup (240ml) of chicken or vegetable stock
- 1 tablespoon of good quality balsamic vinegar
- ½ tablespoon of maple syrup
Dip Base
- 350g of fat free cottage cheese
- 2 spring onions, sliced (green part only)
- ½ teaspoon of onion powder
- Salt and black pepper to season
Instructions
- Heat Butter: Heat a frying pan over medium-high heat and add the butter. Allow it to melt completely to create a perfect base for the onions.
- Cook Onions: Add the thinly sliced onions to the melted butter. Cook until they start to become translucent, stirring occasionally to prevent burning.
- Caramelize with Stock: Reduce the heat to medium-low. Gradually add the chicken or vegetable stock in small portions. Let the liquid reduce before adding more. Continue this process for about 25 minutes until the onions are deeply caramelized and softened.
- Add Sweeteners: Stir in the balsamic vinegar and maple syrup to deepen the flavor and color of the onions. Once combined, set the mixture aside to cool.
- Blend Cottage Cheese: In a mini food processor, blend the fat-free cottage cheese until it becomes smooth and lump-free, creating a creamy dip base.
- Combine Ingredients: Transfer the blended cottage cheese to a bowl. Add the caramelized onions, sliced green parts of the spring onions, and onion powder. Mix thoroughly until well combined.
- Season to Taste: Taste the dip and season with salt and black pepper according to your preference to enhance the overall flavor.
