Instructions

  1. Caramelize the Onions: Warm a large skillet over medium-low heat. Add 1 tablespoon of olive oil and the thinly sliced onions along with a pinch of salt. Cook slowly, stirring occasionally, until the onions become dark golden and caramelized.   2. Prepare the Bean Base: In a food processor, combine the drained and rinsed cannellini beans, 2 tablespoons of olive oil, fresh lemon juice, onion powder, garlic powder, and 1/2 teaspoon salt. Process the mixture until smooth, adding cold water or aquafaba as needed to achieve a creamy, spreadable consistency. Pause several times to scrape down the sides for even blending.   3. Incorporate Herbs and Onions: Add the chopped fresh rosemary, chopped fresh sage, and most of the caramelized onions to the food processor.
