Chai Spice Glaze

  • 1/4 cup powdered sugar
  • 1–2 tbsp milk (adjust for desired consistency)
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan with butter or cooking spray and set it aside to be ready for the batter.
  2. Mix espresso milk: In a small bowl, combine the whole milk and 1 teaspoon of espresso powder, stirring until fully dissolved. Set this mixture aside to infuse.
  3. Beat wet ingredients: In a large mixing bowl, beat the softened salted butter and 3/4 cup granulated sugar together until fluffy and well combined, about 2–3 minutes. Add the eggs one at a time, mixing well after each addition, then beat in the vanilla bean paste until incorporated and fluffy.
  4. Whisk dry ingredients: In a medium bowl, whisk together the 1.5 cups all-purpose flour, cinnamon, ginger, allspice, ground cloves, and baking powder to evenly distribute the spices and leavening agent.
  5. Combine batter: Alternately add the dry ingredient mixture and the espresso milk to the wet ingredients, beginning and ending with the dry ingredients. Mix gently until just combined to keep the batter light.
  6. Prepare topping: In the previously used dry ingredient bowl, combine the brown sugar, turbinado sugar, all-purpose flour, cinnamon, ginger, allspice, cloves, and espresso powder. Stir in the melted butter until the topping forms a crumbly mixture.
