Vegetables
- 1 large spaghetti squash (750g), cooked and shredded
- 1 medium yellow onion (220g), diced
- 8 oz. mushrooms, roughly chopped
- 1 14.5 oz can diced tomatoes, drained

- 4 oz. reduced-fat cream cheese (112g), softened
- 1 cup shredded cheddar cheese (112g), divided

- 1/4 tsp salt
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
- Sauté Vegetables: Spray a skillet with cooking spray and add the diced onions and chopped mushrooms. Cook over medium heat until tender, about 4 to 5 minutes. Drain any excess liquid from the skillet, then transfer the cooked vegetables to a large mixing bowl.
- Cook Ground Beef: In the same skillet, add the ground beef and cook over medium heat until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain the fat from the beef once done.
- Combine Ingredients: Add the cooked ground beef to the large bowl with the sautéed vegetables. Add the drained diced tomatoes, softened cream cheese, 1/2 cup of shredded cheddar cheese, salt, and steak seasoning. Mix well until all ingredients are thoroughly combined.
- Assemble Casserole: Transfer the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
- Bake: Place the casserole in the preheated oven and bake for 20 to 25 minutes, or until the cheese on top is melted, bubbly, and lightly golden.
Notes
- To cook the spaghetti squash, you can roast it in the oven at 400°F for about 40 minutes or microwave it for about 10-12 minutes until tender before shredding.
- Drain excess liquid from mushrooms and beef to prevent the casserole from becoming watery.
- Feel free to swap steak seasoning for your favorite seasoning blend or add a pinch of garlic powder for extra flavor.
- This dish can be made ahead and refrigerated; reheat in the oven before serving.
- For a lower-fat version, use lean ground beef and reduced-fat cheese options as specified.
