Ingredients
Protein and Oils
- 2 Tbsp avocado oil (divided)
- 1 cup diced boneless skinless chicken breasts
Vegetables and Aromatics
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup diced yellow onion
- 2 cloves garlic (minced)
- 1 tsp minced fresh ginger
- 1 cup fresh pineapple chunks
- 3/4 cup frozen peas and carrots (thawed)
- 2 green onions (diced)
Rice and Sauces
- 3 cups cooked jasmine rice (leftover or day-old preferred)
- 2 Tbsp reduced sodium soy sauce
- 1 Tbsp oyster sauce
- 1 tsp toasted sesame oil
Instructions
- Cook chicken: Heat a large skillet over medium-high heat. Once hot, add 1 Tbsp of the avocado oil. Add the diced chicken breasts, season with kosher salt and black pepper. Cook for 4-5 minutes, stirring occasionally until the chicken is cooked through. Remove chicken to a plate but do not clean the skillet.
- Cook aromatics and veggies: Add the remaining 1 Tbsp avocado oil to the skillet. Add diced yellow onion, minced garlic, and minced fresh ginger. Cook for 2-3 minutes until the mixture is fragrant and the onions are soft.
- Caramelize pineapple: Push the onion mixture to one side of the skillet. Add fresh pineapple chunks and cook for 2-3 minutes, allowing them to caramelize and sear lightly.
- Add peas and carrots: Stir in the thawed peas and carrots and cook for about 2 minutes until tender, stirring often.
- Finish the rice: Return the cooked chicken to the skillet. Add the cooked jasmine rice and mix thoroughly. Add soy sauce, oyster sauce, and toasted sesame oil, stirring well to evenly distribute the flavors. Cook for an additional 3-4 minutes until the rice is heated through.
- Garnish and serve: Serve the fried rice hot, topped with diced green onions for a fresh finish.
Notes
- Use day-old or leftover rice to get the best texture; freshly cooked rice can be too sticky.
- Adjust soy and oyster sauce amounts to taste if you prefer less sodium.
- For a spicier kick, add a pinch of red chili flakes or a drizzle of sriracha.
- Make sure to thaw frozen peas and carrots to ensure even cooking.
- Leftover fried rice can be refrigerated in an airtight container for up to 3 days.
