Ingredients
To Marinate Chicken
- 1/2 cup yogurt
- 2 tablespoons oil
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 2 tablespoons tomato paste or puree
- 1/2 teaspoon turmeric powder
- 2 teaspoons salt
- 2 teaspoons chili powder or paprika
- 1 tablespoon garam masala
- 2 tablespoons chopped mint
- 2 tablespoons chopped cilantro
- 1.5 pounds skinless chicken (thighs and drumsticks)
To Cook Rice
- 4 cups water
- 1 bay leaf
- 1 star anise
- 1 cinnamon stick
- 1 cardamom pod
- 3 cloves
- 1/4 teaspoon peppercorns
- Salt to taste
- 1 cup basmati rice
For Crispy Onions and Assembly
- 2 tablespoons oil
- 1 large red onion, thinly sliced
- Cilantro, for garnish
- Mint, for garnish
- Lemon wedges, for garnish
- Yogurt raita, to serve
Instructions
- Marinate Chicken: In a medium bowl, combine yogurt, oil, grated ginger and garlic, tomato paste, turmeric powder, salt, chili powder, garam masala, chopped mint, and cilantro. Add the skinless chicken pieces and coat well. Cover and marinate for at least 30 minutes to allow the flavors to penetrate.
- Cook Rice: In a large saucepan, bring 4 cups of water to a boil over medium heat. Add the bay leaf, star anise, cinnamon stick, cardamom, cloves, peppercorns, salt, and basmati rice. Reduce the heat to low and cook the rice until about 70% done, then drain any excess water and set the partially cooked rice aside.
- Make Crispy Onions: Heat oil in a dutch oven over medium heat. Add the thinly sliced red onions and cook, stirring occasionally, until the onions turn crispy and golden brown, about 10-12 minutes. Remove them with a slotted spoon onto paper towels to drain and set aside.
- Cook Chicken: In the same dutch oven used for onions, add the marinated chicken and cook over medium heat for 7-8 minutes until the chicken is approximately 70% cooked and oil begins to ooze out of the mixture.
- Layer the Biryani: Turn off the heat. Layer the cooked chicken with half of the crispy onions and chopped cilantro spread evenly over the chicken. Next, add the partially cooked rice as a uniform layer covering the chicken and onions.
- Finish Layering and Cook: Add the remaining crispy onions and cilantro on top as a final layer. Cover the dutch oven tightly and cook the assembled biryani on very low heat for 12-15 minutes to allow all flavors to meld and the rice to finish cooking.
- Serve: After cooking, gently fluff the rice to mix with the chicken. Serve the Chicken Biryani hot garnished with fresh cilantro, mint, and lemon wedges along with cooling yogurt raita on the side.
Notes
- Marinating the chicken for longer (up to 2 hours) can improve flavor and tenderness.
- Partial cooking of rice ensures it doesn’t become mushy when final cooking happens in the dutch oven.
- Use fresh spices for the best aromatic experience.
