Ingredients

  • 2 garlic cloves (finely grated)
  • 1 tbsp olive oil (1530 ml)
  • Salt (to taste)

Instructions

  1. Prepare the Chimichurri: Finely chop the parsley and garlic cloves. In a bowl, combine the chopped parsley and garlic with vinegar, olive oil, dried oregano, and chili flakes if using. Stir well and let the mixture sit for 10–15 minutes to allow the flavors to meld together.
  2. Prepare the Fries: Toss the peeled and thin-cut potatoes with the finely grated garlic, olive oil, and salt until evenly coated. Spread them out on a baking sheet in a single layer to ensure even roasting. Roast in a preheated oven at 400°F (200°C) for 25–30 minutes, flipping halfway through cooking to achieve a crispy, golden exterior.
  3. Cook the Steak: Season the steak generously with salt and black pepper. Rub the steak with olive oil to prevent sticking and aid in browning. Grill or pan-sear the steak over high heat for about 3–4 minutes on each side for medium-rare doneness. Adjust cooking time if you prefer your steak more or less cooked. Once cooked, let the steak rest for a few minutes to retain its juices, then slice it thinly against the grain.
  4. Serve: Arrange the sliced steak on a plate and generously spoon the chimichurri sauce over the top. Serve alongside the hot, crispy garlic frites for a complete and flavorful meal.
