Ingredients
Salad Ingredients
- 2 cups cooked shredded chicken
- 1 cup fresh snow peas
- 1/2 cup shredded carrots
- 1/2 cup diced red bell pepper
- 4 cups cooked rotini pasta
- 1 1/2 cups chopped napa cabbage
- 8 oz can sliced water chestnuts, drained
- 1 cup chow mein noodles
- 1/4 cup chopped scallions
Dressing Ingredients
- 1/4 cup soy sauce
- 1/4 cup mayonnaise
- 2/3 cup plain yogurt
- 1 teaspoon ground ginger
- 1 teaspoon pepper
- 2 tablespoons sesame seeds
Instructions
- Combine the Salad Ingredients. In a large bowl, add the cooked shredded chicken, fresh snow peas, shredded carrots, diced red bell pepper, cooked rotini pasta, chopped napa cabbage, drained water chestnuts, chow mein noodles, and chopped scallions. Gently toss all the ingredients together until they are evenly mixed.
- Prepare the Dressing. In a separate bowl, whisk together the soy sauce, mayonnaise, plain yogurt, ground ginger, and pepper until the mixture is smooth and well combined.
- Toss Salad with Dressing. Pour the prepared dressing over the combined salad ingredients in the large bowl. Toss gently but thoroughly to ensure everything is evenly coated with the dressing.
- Add Sesame Seeds. Sprinkle the sesame seeds evenly over the top of the salad, adding texture and a nutty flavor.
- Chill before Serving. Refrigerate the salad for about 30 minutes to allow the flavors to meld together and serve chilled for the best taste.
Notes
- This salad can be prepared a few hours in advance to enhance flavor melding.
- Adjust the amount of soy sauce in the dressing for reduced sodium if desired.
- For added crunch, consider toasting the sesame seeds before sprinkling.
- Substitute rotini with fusilli or penne pasta if preferred.
- Yogurt can be replaced with sour cream for a richer dressing texture.
- Ensure the cooked pasta is cooled before mixing to prevent wilting the fresh vegetables.
