These Chocolate Avocado Muffins are a deliciously moist and fudgy treat that combines the richness of cocoa with the creamy texture of mashed avocado. Perfect as a healthier alternative to traditional muffins, they use avocado for fat instead of butter, resulting in a nutritious, flavorful baked good that’s easy to prepare and perfect for breakfast or snack time.

  • Total Time: 32 minutes
  • Yield: 5 muffins

Ingredients

Dry Ingredients

  • 1/2 cup + 2 tablespoons all purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Wet Ingredients

  • 1 large egg
  • 1/2 cup mashed avocado (about 1 medium)
  • 1/4 cup sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Additional Ingredients

  • 1/4 cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Prep. Preheat the oven to 350°F (175°C) and line a muffin pan with 5 paper liners to prepare for baking.
  2. Mix dry ingredients. In a small bowl, whisk together the all purpose flour, cocoa powder, baking soda, baking powder, and salt until fully combined.
  3. Mix wet ingredients. In a larger bowl, whisk the egg, mashed avocado, sugar, light brown sugar, milk, and vanilla extract until the mixture is smooth and the sugar has dissolved completely.
  4. Finish and bake. Add the dry flour mixture and chocolate chips to the wet ingredients, stirring gently just until everything is combined. Avoid over-mixing to keep muffins tender. Divide the batter evenly among the prepared muffin cups and sprinkle a few extra chocolate chips on top of each muffin. Bake in the preheated oven for 24 to 26 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the muffins cool in the pan on a wire rack before serving to lock in moisture and enhance texture.

Notes

  • Do not overbake to ensure the muffins remain moist and fudgy.
  • You can substitute milk with any plant-based milk for a dairy-free version.
  • For a more intense chocolate flavor, add a tablespoon more cocoa powder or extra chocolate chips.
  • Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
  • Mashed avocado adds healthy fats and moisture, making these muffins a nutritious alternative to butter-based recipes.
