Ingredients
Rice
- 2 cups long grain white rice, rinsed if desired
- 4 cups water
- 2 teaspoons kosher salt, or to taste
- 2 tablespoons olive oil, canola, or vegetable oil, divided
Flavorings
- 3 tablespoons freshly squeezed lime juice (about 2 small limes)
- 1 teaspoon finely grated lime zest (zest the lime before squeezing the juice)
- 1 cup chopped fresh cilantro
Instructions
- Cook the rice: In a medium saucepan, combine the rinsed rice, 4 cups water, 2 teaspoons kosher salt, and 1 tablespoon of oil. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is tender and water is absorbed, about 18-20 minutes or according to package directions.
- Fluff the rice: Remove the saucepan from heat and let it sit covered for 5 minutes. Then fluff the rice gently with a fork and transfer it to a large mixing bowl.
- Add flavorings: Drizzle the remaining 1 tablespoon of oil over the rice, then add the freshly squeezed lime juice, lime zest, and chopped cilantro. Toss everything lightly and evenly until well combined.
- Serve immediately: Transfer the cilantro lime rice to a serving bowl and enjoy it warm as a delicious side dish to your favorite meals.
Notes
- Rinsing the rice before cooking helps to remove excess starch, resulting in fluffier grains.
- Adjust salt to taste depending on your dietary preference.
- For a more intense lime flavor, add additional zest or juice as desired.
- This rice pairs well with Mexican dishes like tacos, burritos, or grilled meats.
- Leftovers can be stored covered in the refrigerator for up to 3 days; reheat with a splash of water to retain moisture.
