For the Cinnamon Filling
- 10-12 slices sandwich bread, crusts removed
- 1/2 stick (4 tbsp) butter, softened
- 1/4 cup light brown sugar
- 3 tsp ground cinnamon
For the Egg Mixture
- 2 large eggs
- 3 tbsp milk
For Coating and Finishing
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon (or to taste)
- 2 tbsp butter for cooking, more if necessary
- Powdered sugar, optional for dusting
- Maple syrup, for serving (optional)
Instructions
- Prepare the cinnamon filling: In a small bowl, combine the softened butter, light brown sugar, and 3 teaspoons of cinnamon. Beat until the mixture is smooth and well blended.
- Mix sugars and eggs: In another bowl, combine the granulated sugar with 1 teaspoon of cinnamon and set aside. In a shallow bowl, beat the eggs with the milk and set this egg mixture aside as well.
- Prepare the bread slices: Remove the crusts from each bread slice. Using a rolling pin, flatten each slice to about 1/8 inch thickness to make them easier to roll.
- Fill and roll the bread: Spread a thick layer of the cinnamon butter filling evenly over each flattened bread slice. Then gently but tightly roll up each slice around the filling, sealing the roll-up as you go. Repeat for all slices.
- Heat the pan: Preheat a non-stick skillet or frying pan over medium heat. Melt about 1 tablespoon of butter in the pan to coat the surface.
- Dip and cook the roll ups: Dip each cinnamon roll up in the egg and milk mixture, ensuring it is fully coated. Place the roll-ups seam side down in the pan, cooking about 3-4 at a time depending on pan size.
- Brown all sides: Cook the roll ups until they turn golden brown on the bottom, then turn a quarter turn to brown all sides evenly. Continue cooking and turning until all sides are nicely browned and the roll ups are cooked through.
- Coat with cinnamon sugar and serve: Remove the cooked roll ups and roll them in the reserved cinnamon sugar mixture, or dust with powdered sugar if preferred. Serve warm with maple syrup for dipping, if desired.
