Instructions
- Cream Wet Ingredients: In a large bowl or stand mixer bowl, cream together the butter, brown sugar, honey, molasses, and vanilla bean paste until well combined and smooth.
- Combine Dry Ingredients: Add the all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and a pinch of salt to the wet mixture. Mix until a thick dough forms.
- Chill Dough: Shape the dough into a disc, wrap it tightly in plastic wrap, and chill in the refrigerator for one hour or in the freezer for twenty minutes to firm it up for easier rolling.
- Prepare Baking Sheets and Preheat Oven: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
- Roll Out Dough: Roll the chilled dough out very thinly between a silicone baking mat and a sheet of plastic wrap, or alternatively between two sheets of parchment paper, to your desired thickness.
- Cut and Transfer: Use cookie cutters to cut the dough into desired shapes. Transfer the cutouts carefully onto the prepared baking sheets using a spatula or bench scraper.
- Decorate: Poke each cracker a couple of times with a fork to prevent puffing during baking, then sprinkle evenly with cinnamon sugar on top for extra flavor and crunch.
- Bake: Bake the crackers in the preheated oven for 12 to 15 minutes or until they turn golden brown around the edges.
- Cool and Serve: Remove from oven and allow the crackers to cool completely on a wire rack before enjoying. Store leftovers in an airtight container.
