Instructions

  2. Combine Dry Ingredients: Add the all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and a pinch of salt to the wet mixture. Mix until a thick dough forms.
  3. Chill Dough: Shape the dough into a disc, wrap it tightly in plastic wrap, and chill in the refrigerator for one hour or in the freezer for twenty minutes to firm it up for easier rolling.
  4. Prepare Baking Sheets and Preheat Oven: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
