Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough for baking the biscuits to a golden crisp.
- Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and parsley flakes until well mixed.
- Mix Wet Ingredients: In a separate bowl or measuring cup, whisk together the cottage cheese, vegetable oil, milk, and egg until the mixture is smooth and combined.
- Make the Dough: Create a well in the center of the dry ingredients and pour in the cottage cheese mixture. Stir gently until a shaggy dough forms; some dry spots are okay.
- Knead the Dough: Turn the dough out onto a lightly floured surface and knead gently a few times just until it comes together into a cohesive dough. Do not over-knead to keep the texture tender.
- Roll and Cut Biscuits: Press the dough out to about 3/4 inch thick. Using a 2 3/4 inch round cutter, cut biscuits by pressing straight down without twisting. Gather scraps and cut until all dough is used.
- Prepare for Baking: Place the biscuits close together on a baking sheet lined with parchment or lightly sprayed with non-stick spray to encourage rising upwards rather than spreading wide.
- Bake the Biscuits: Bake on the center rack of the preheated oven for 10-12 minutes or until the biscuits are risen and golden brown on the top.
Notes
- For best results, use cold ingredients especially the cottage cheese and milk to keep the biscuits tender.
- Do not twist the biscuit cutter when cutting to ensure the biscuits rise evenly.
- Biscuits are best enjoyed fresh but can be stored in an airtight container for up to 2 days and reheated gently.
- Optional: Add a pinch of black pepper or garlic powder for a flavor twist.
