Cowboy Caviar is a vibrant, fresh, and healthy salad packed with black beans, black-eyed peas, colorful vegetables, and a zesty lime and balsamic dressing. This quick and easy no-cook dish is perfect as a side, dip, or a light meal that’s both refreshing and flavorful.

Ingredients

For the Dressing

  • 2 Tbsp olive oil
  • Juice of 1 fresh lime (about 2 Tbsp)
  • ½ Tbsp balsamic vinegar
  • ½ tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp granulated sugar

For the Salad

  • 15 oz. can black beans, drained and rinsed
  • 15 oz. can black-eyed peas, drained and rinsed
  • 1 bell pepper (any color), small diced (about 250g or 2 cups)
  • 2 Roma tomatoes, small diced (about 160g or 1 cup)
  • 1 jalapeño, small diced (about 50g or ¼ cup)
  • ¼ red onion, small diced (about 100g or 1 cup)
  • ¼ bunch fresh cilantro, chopped (about 25g or ¼ cup)
  • Corn kernels, fresh or frozen & thawed (optional, quantity to preference)
  • 1 avocado, diced (optional, added before serving)

Instructions

  1. Prep: Gather and prepare all ingredients by washing, draining, and dicing as needed.
  2. Whisk: In a small bowl, whisk together the olive oil, lime juice, balsamic vinegar, chili powder, ground cumin, salt, and sugar until combined. Set aside.
  3. Drain: Rinse and drain both the black beans and black-eyed peas thoroughly in a colander. Transfer them to a large mixing bowl.
  4. Dice: Finely dice the bell pepper, Roma tomatoes, jalapeño (remove seeds for less heat), and red onion. Chop the fresh cilantro roughly. Aim for vegetable pieces similar in size to the beans for uniform texture.
  5. Combine: Add the diced vegetables and chopped cilantro into the bowl with the beans. If using corn, add it now.
  6. Serve: Pour the prepared dressing over the combined salad ingredients. Stir gently but thoroughly to coat everything evenly. Serve immediately or refrigerate for 30 minutes to overnight to allow flavors to meld. Add diced avocado just before serving if desired. Enjoy!

Notes

  • Removing jalapeño seeds reduces the spice level.
  • The salad tastes better after marinating in the fridge for at least 30 minutes.
  • Corn and avocado are optional but add sweetness and creaminess respectively.
  • Use fresh lime juice for best flavor.
