A delightful Cranberry Orange Custard Pie featuring a luscious custard filling infused with fresh cranberries and bright orange zest, baked in a flaky 10-inch pie crust. This pie balances tart berries with a creamy, sweet custard, perfect for festive occasions or cozy desserts.

  • Total Time: 1 hour 10 minutes
  • Yield: 8 servings

Ingredients

Pie Shell

  • 1 unbaked 10-inch pie shell

Filling

  • 12 oz. fresh cranberries (if frozen, thaw and pat dry)
  • 1 1/2 cups sugar
  • 3 eggs, beaten
  • 1 cup heavy whipping cream
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla bean paste

Instructions

  1. Preheat oven: Preheat your oven to 400°F (204°C) to ensure it reaches the proper temperature before baking.
  2. Prepare pie shell with cranberries: Place the fresh cranberries evenly into the unbaked 10-inch pie shell, distributing them so each bite has berry goodness.
  3. Mix custard filling: In a separate large bowl, whisk together the sugar, beaten eggs, heavy whipping cream, flour, salt, orange zest, and vanilla bean paste until smooth and fully combined.
  4. Combine and start baking: Pour the custard mixture evenly over the cranberries in the pie shell. Place the pie in the oven and bake at 400°F for 10 minutes to set the initial custard layer.
  5. Reduce heat and continue baking: Lower the oven temperature to 350°F (177°C). Cover the edges of the pie crust with a pie crust shield or tent with aluminum foil to prevent over-browning. Bake for an additional 40 to 45 minutes until the custard is fully set and a knife inserted near the center comes out clean.
  6. Cool and store: Remove the pie from the oven and allow it to cool completely on a wire rack. Once cooled, refrigerate the pie to fully set the custard and for optimal serving.

Notes

  • Use fresh cranberries if possible for the best texture and flavor; if using frozen, thaw and drain thoroughly.
  • Covering the crust edges prevents burning and keeps the crust golden.
  • Check custard doneness by gently shaking the pie or inserting a knife near the center; it should come out mostly clean.
  • This pie is best served chilled or at room temperature and can be stored refrigerated for up to 3 days.
  • Orange zest adds bright citrus notes; make sure to use only the orange part of the peel, avoiding the bitter white pith.
