Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until just al dente. Drain and set aside once done.
- Make the roux: While the pasta is nearing completion, melt the butter in a skillet over medium-high heat. Stir in the flour and cook the mixture for about 2 minutes, stirring frequently to form a smooth roux that will thicken the sauce.
- Add garlic and broth: Stir the minced garlic into the roux and cook briefly until fragrant, about 30 seconds. Pour in the chicken broth and allow the mixture to simmer for about a minute to meld the flavors.
- Incorporate cream: Whisk in the heavy whipping cream and continue to cook the sauce for a few more minutes, stirring occasionally, until it thickens to your preferred consistency.
- Add cheese and seasoning: Stir in the freshly grated parmesan cheese, then season the sauce with salt and pepper to taste. Adjust seasoning as needed to enhance the flavor.
- Toss pasta with sauce: Drain the cooked pasta and return it to the pot or a large bowl. Pour the creamy garlic sauce over the pasta and toss well to coat evenly. Add a splash of reserved pasta water if you prefer a thinner sauce.
- Serve: Plate the pasta and garnish with chopped fresh parsley and extra parmesan if desired. Serve immediately while warm and creamy.
