Chicken
- 2 large boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning

Sauce
- 10.5 oz. cream of chicken soup
- 1 ½ cups milk
- 1 cup sour cream, at room temperature
- ½ teaspoon onion powder
- 1 oz. packet Ranch seasoning mix
Instructions
- Prepare the Chicken: Slice each chicken breast into 2-3 thinner slices, about ½ inch thick. If needed, gently pound the slices with a meat tenderizer to even the thickness. This ensures the chicken cooks evenly and stays juicy.
- Season the Chicken: Pat the chicken slices completely dry with paper towels. Sprinkle both sides evenly with Italian seasoning, salt, and pepper. Brush one side of each slice with the melted butter, making sure the butter is warm but not hot to avoid cooking the chicken prematurely.
- Sear the Chicken: Heat 1 to 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the chicken slices in batches to avoid overcrowding. Sear each side for 4-5 minutes until a golden brown crust forms. Remove the seared chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, reduce heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir continuously until all ingredients are well combined. Allow the sauce to gently bubble and reduce slightly for about 5 minutes to develop its flavors.
- Simmer Chicken in Sauce: Return the seared chicken slices to the skillet, spooning the sauce over each piece. Partially cover the skillet with a lid and let the chicken simmer in the sauce for approximately 10 minutes, allowing the meat to absorb the creamy, flavorful mixture and heat through completely.
- Serve: Serve the creamy ranch chicken hot, optionally alongside baked potatoes with extra sauce spooned over them for a hearty meal.
