Instructions

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic, dried oregano, and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.
  2. Simmer the Base: Stir in the chickpeas and tomato paste. Pour in the vegetable broth and mix well. Bring the soup to a boil, then reduce heat to low. Cover and let it simmer gently for 15 minutes, allowing flavors to blend.
  3. Blend Half the Soup: Use an immersion blender or a regular blender to puree about half the soup until smooth and creamy. This step thickens the soup while maintaining chickpea texture in the remaining portion.
  4. Add Final Ingredients: Stir in chopped sundried tomatoes, lemon juice, coconut milk or cream, and fresh spinach. Allow the soup to simmer for another 5-10 minutes until the spinach wilts and flavors meld. Season with salt and black pepper to taste.
