Feta Rolls

- 7 sheets frozen phyllo dough (thawed)

Sweet Spicy Chili Sauce
- 1/4 cup sweet chili sauce (store-bought)
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp Sriracha sauce
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp water
Instructions
- Preheat Oven and Prepare Feta Mixture: Preheat your oven to 425°F and line a baking sheet with parchment paper to prevent sticking. In a bowl, combine the crumbled feta, fresh dill, fresh thyme, lemon juice, minced garlic, and a drizzle of honey. Mix thoroughly until all ingredients are well blended, creating a flavorful and creamy filling.
- Prepare and Roll Phyllo Dough: Place one sheet of thawed phyllo dough on a clean work surface while keeping the others covered with a damp towel to prevent drying. Fold the sheet in half, then brush the top generously with extra virgin olive oil. Spoon about 2 tablespoons of the feta mixture onto the bottom center side of the dough. Fold the edges inward over the feta to enclose it and press smoothly to avoid air pockets.
- Roll Up the Dough: Starting from the side with the filling, roll the dough into a tight log, stopping about an inch before the end. - Finish and Serve: Once the feta rolls are baked, brush each roll generously with the sweet spicy chili sauce. Garnish with fresh thyme for a fragrant touch.
