Chicken and Coating

- ½ cup flour
- 2 large eggs
- ½ cup panko breadcrumbs
- ½ cup Italian breadcrumbs
- ½ cup grated Parmesan cheese
- Avocado or olive oil spray
Garlic Butter Sauce
- ¼ cup unsalted butter
- 6 minced garlic cloves
- Fresh parsley, finely chopped (for garnish)
- Optional: lemon wedges for squeezing over cooked chicken
Instructions
- Prep the Chicken: Place the chicken fillets on a cutting board and cover with plastic wrap. Use a rolling pin or meat tenderizer to pound evenly until they are uniformly thin. Season both sides generously with salt and pepper.
- Prepare Coatings: Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Italian breadcrumbs, and grated Parmesan cheese.
- Dredge the Chicken: Coat each chicken fillet first in flour, shaking off any excess. Next, dip into the beaten eggs. Finally, press firmly into the breadcrumb mixture to evenly coat both sides.
- Air Fry the Chicken: Arrange the coated chicken fillets in a single layer in the air fryer basket. Spray liberally with avocado or olive oil spray. Air fry at 390°F (200°C) for a total of 10-12 minutes, flipping the chicken halfway through cooking (after 6 minutes) and spraying again with oil. Cook in batches of two if necessary.
- Make the Garlic Butter: While the chicken cooks, melt the unsalted butter in a large pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant and lightly sizzling.
- Finish the Chicken: Transfer the air-fried chicken fillets into the garlic butter pan. Cook each side for about 1 minute, spooning the garlic butter over the chicken to coat well and enhance flavor.
- Garnish and Serve: Sprinkle the garlic butter chicken with freshly chopped parsley and squeeze fresh lemon juice over top if desired. Serve immediately and enjoy the crispy, buttery, garlicky deliciousness.
