These Crunchy Chocolate Quinoa Bars are a delicious and nutritious snack, combining the crispy texture of toasted quinoa with rich dark chocolate and creamy nut butter. Perfect as a healthy treat or energy boost, these bars are easy to make and require no baking.

  • Total Time: 1 hour 10 minutes
  • Yield: 5 servings

Ingredients

Main Ingredients

  • 1/2 cup raw white quinoa (pre-rinsed)
  • 1 bar dark chocolate (around 70%)
  • 1/4 cup peanut butter (or any nut/seed butter)
  • 1 pinch of salt (optional)

Instructions

  1. Toast Quinoa: Heat a dry skillet over medium heat without any oil. Add the pre-rinsed quinoa and toast for 4–6 minutes while stirring constantly until the quinoa smells nutty and some grains start to pop. Be attentive to prevent burning.
  2. Melt Chocolate and Nut Butter: Melt the dark chocolate and peanut butter together using the microwave in 30-second intervals or a double boiler, stirring until smooth. If using, add a pinch of salt to balance flavors.
  3. Combine Ingredients: Mix the toasted quinoa thoroughly into the melted chocolate mixture until all quinoa is evenly coated. If the mixture appears dry, add 1–2 teaspoons of additional nut butter or some coconut oil to achieve the right consistency.
  4. Shape the Bars: Transfer the mixture into a small container or loaf pan lined with parchment paper. Press the mixture firmly and smooth the surface for an even bar shape.
  5. Chill and Set: Place the container in the refrigerator for 1 to 2 hours to allow the bars to fully set and harden.
  6. Slice and Serve: Use a sharp knife to cut the chilled mixture into bars or squares of your desired size. For easier slicing, dip the knife in hot water and wipe it dry between cuts.

Notes

  • Ensure quinoa is pre-rinsed before toasting to remove bitterness.
  • Stir toasting quinoa constantly to prevent burning due to its quick cooking nature.
  • Use dark chocolate with around 70% cocoa for a rich flavor and to keep sugar content moderate.
  • Nut butter can be substituted with any seed-based butter like almond or sunflower for different flavors.
  • Adding a bit of coconut oil helps with texture if the mixture seems too dry.
  • Store bars in an airtight container in the refrigerator for up to a week.
