Ingredients
Cream Cheese Spread
- 8 oz. cream cheese, softened slightly
- 2 Tbsp mayonnaise
- 2 Tbsp minced fresh chives
- 2 Tbsp minced fresh parsley
- 2 Tbsp minced fresh dill
- 2 tsp lemon zest
- 1 tsp lemon juice
- 1/2 tsp finely minced garlic
- Salt, to taste
- Black pepper, to taste
Sandwich Assembly
- 1 English cucumber, thinly sliced
- 8 to 10 slices fresh sandwich bread (wheat, white, or multigrain)
Instructions
- Whip the Cream Cheese: In a medium mixing bowl, use an electric hand mixer to whip the softened cream cheese on medium-high speed until it becomes fluffy, about 2 minutes. This will lighten the texture, making it easier to spread and more delicate in mouthfeel.
- Mix in Flavorings: Gently fold in the mayonnaise, minced fresh chives, parsley, dill, lemon zest, lemon juice, and finely minced garlic. Season the mixture with salt and black pepper according to your taste preferences. Ensure the herbs and seasonings are evenly incorporated for a consistent flavor.
- Prepare the Sandwiches: Spread the prepared cream cheese mixture evenly over one side of each bread slice. On four of the slices, layer a generous amount of the thinly sliced cucumber on top of the cream cheese. Then place the remaining slices of bread on top of the cucumbers, cream cheese side facing down, creating sandwich halves.
- Finish and Serve: Press down gently on the sandwiches to secure the filling. If desired, trim the crust edges for a neater presentation. Then cut the sandwiches into halves or quarters, depending on your serving preference. Serve immediately to enjoy the fresh flavors and crisp texture of the cucumbers.
Notes
- For best results, use very thin cucumber slices to prevent overwhelming the sandwich and to keep it from becoming soggy.
- You can chill the sandwiches briefly before serving to enhance the refreshing taste.
- Use fresh herbs for the most vibrant flavor; dried herbs will not provide the same fresh taste.
- Variations can include adding smoked salmon or radishes for extra texture and flavor.
- To make it lighter, substitute regular mayonnaise with light or Greek yogurt.
