Ingredients
Chicken
- 1¼ lb boneless skinless chicken breasts or chicken thighs, cut into bite-sized pieces
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ⅛ teaspoon paprika
Cooking
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter, divided
- 1½ tablespoons minced fresh garlic (about 4 cloves)
- Finely chopped fresh parsley, for garnish
Instructions
- Season the Chicken: In a bowl, coat the bite-sized chicken pieces evenly with Italian seasoning, salt, black pepper, and paprika to ensure every piece is flavorful.
- Heat the Skillet: Place a large non-stick skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter, tilting the pan to spread the butter evenly as it melts.
- Cook the Chicken, First Side: Arrange the seasoned chicken pieces in a single layer in the skillet, avoiding overcrowding to allow proper browning rather than steaming. Let them cook undisturbed for about 3 minutes until the bottoms develop a golden brown crust.
- Cook the Chicken, Second Side: Flip the chicken pieces and cook for an additional 2 minutes, or until they are nearly cooked through. If your skillet cannot fit all pieces without crowding, cook the chicken in batches for best results.
- Add Garlic and Butter: Lower the heat to medium, add the remaining 2 tablespoons of butter, minced garlic, and chopped parsley to the skillet. Stir and cook everything together for about 1 more minute, ensuring the chicken is fully cooked and the garlic is fragrant. Scrape up the flavorful browned bits from the bottom of the pan to incorporate into the sauce.
Notes
- Chicken thighs can be used as a juicier alternative to breasts.
- Ensure not to overcrowd the skillet to achieve a nice sear and golden crust on the chicken.
- Fresh parsley adds brightness, but you can substitute with dried parsley if needed.
- Serve immediately for best texture and flavor.
