Ingredients
Fish and Seasoning
- 1 ½ pounds cod loin fillet (patted dry and lightly seasoned with salt and pepper)
Sauce
- 2 tablespoons olive oil
- 4 tablespoons lemon juice (from 1-2 lemons)
- 4 cloves garlic (minced)
- Salt and pepper (to taste)
- ¼ cup butter (diced)
- 1 small lemon (sliced)
Garnish (Optional)
- Chopped parsley
Instructions
- Prep: Preheat your oven to 400°F (200°C). Lightly grease a rectangular baking dish that will comfortably fit all your cod pieces, then place the cod fillets inside the dish.
- Make sauce: In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, and minced garlic. Season the mixture with salt and pepper to taste.
- Assemble: Pour the lemon garlic sauce evenly over the cod fillets in the baking dish. Sprinkle the diced butter pieces evenly on top of the cod. Place the lemon slices on each piece of fish to infuse extra flavor during baking.
- Bake: Bake the cod in the preheated oven for 15-20 minutes, or until the fish becomes opaque and flakes easily with a fork, indicating it is fully cooked.
- Serve: Once baked, sprinkle chopped parsley over the fish for a fresh finish if desired. Serve immediately and enjoy your flavorful garlic butter lemon cod.
Notes
- Ensure the cod fillets are patted dry for better flavor absorption and even cooking.
- You can adjust the amount of garlic based on your preference for stronger or milder garlic flavor.
- Use fresh lemon juice for the best citrus taste; bottled lemon juice is not recommended.
- Butter can be replaced with a dairy-free alternative if needed for dietary restrictions.
- Serve this dish with steamed vegetables or a light salad for a balanced meal.
