Ingredients
Steak
- 2-3 pounds sirloin steaks
- 1-1 ½ tsp salt
- ½ tsp black pepper
Cooking and Flavoring
- 2-3 tablespoons vegetable oil
- 4 tablespoons unsalted butter
- 3 cloves garlic, smashed
- 2-3 sprigs thyme
- 1-2 sprigs rosemary
Instructions
- Prepare the steak: Cut the sirloin steaks into 1 to 1 ½ inch pieces. Season all sides evenly with salt and black pepper to enhance the natural flavors.
- Heat the skillet: Place a cast iron skillet or heavy pan over medium-high heat until it is very hot. Add 2 tablespoons of vegetable oil and wait until it shimmers, indicating it is ready for searing.
- Sear the steak tips: In batches to avoid overcrowding, add the steak pieces to the hot oil. Sear on all sides, turning repeatedly until a rich brown crust forms. Remove the cooked steak tips from the pan and set aside. Add additional oil if needed for subsequent batches.
- Prepare garlic herb butter: Lower the heat to medium and let the skillet cool slightly for 3-4 minutes. Add the butter, smashed garlic cloves, thyme, and rosemary. Stir continuously until the butter melts and the herbs and garlic become fragrant, about 1 minute.
- Finish cooking: Return the steak tips to the skillet and stir to coat thoroughly with the garlic herb butter. Let the flavors meld together as the meat reheats for 2-3 minutes before serving.
Notes
- Using a cast iron skillet ensures even searing and better heat retention.
- Do not overcrowd the pan when searing to ensure proper browning.
- Smashed garlic infuses the butter with a mellow garlic flavor. Remove before serving if preferred.
- Fresh herbs can be replaced with dried versions if fresh are not available, but reduce quantity by half.
- Rest cooked steak tips for a few minutes before serving to retain juices.
