Garlicky Creamy Brussels Sprouts Au Gratin is a rich and comforting side dish featuring tender brussels sprouts baked in a flavorful garlic-infused creamy sauce, topped with a decadent blend of melted parmesan, cheddar, and fontina cheeses. Perfect for holiday dinners or cozy family meals.

  • Total Time: 30 minutes
  • Yield: 5 servings

Ingredients

Vegetables

  • 16 ounces brussels sprouts (cleaned, trimmed and cut in half)

Dairy & Cheese

  • 2 tablespoons butter
  • ½ cup heavy cream
  • ½ cup parmesan cheese (shredded)
  • 1 cup cheddar cheese (shredded)
  • 1 cup fontina cheese (shredded)

Spices & Aromatics

  • 3 cloves garlic (minced)
  • ½ teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat: Position a rack in the center of the oven and preheat the oven to 375ºF. This ensures the oven is at the correct temperature for evenly baking the dish.
  2. Prep: While the oven preheats, clean and trim the brussels sprouts, and cut them in half. Shred the fontina, cheddar, and parmesan cheeses. Combine all the shredded cheeses in one bowl for easy use later.
  3. Infuse: Heat an oven-proof skillet or pan over medium heat and add the butter and minced garlic. Let the garlic gently soften and release its flavor into the butter without browning. Once the garlic begins to simmer, turn off the heat and stir in the heavy cream, kosher salt, black pepper, and garlic powder. Then, mix in half of the combined shredded cheese until well incorporated.
  4. Bake: Add the brussels sprouts to the pan and stir to coat them evenly with the creamy garlic sauce. Spread the sprouts out in a single layer and sprinkle the remaining cheese over the top. Transfer the pan to the preheated oven and bake for 18 to 25 minutes, or until the cheese melts into a golden, bubbly crust and the brussels sprouts are tender. Serve warm alongside your favorite protein and sides.

Notes

  • If you don’t have a stove-to-oven safe pan like a cast iron skillet or braiser, you can prepare the garlic butter and cream sauce in a regular saucepan, then combine everything in an oven-safe baking dish before topping with cheese and baking.
  • For more even cooking, try to cut the brussels sprouts to similar sizes.
  • Use freshly shredded cheeses instead of pre-shredded for better melting and flavor.
  • This dish pairs wonderfully with roasted meats, grilled chicken, or as part of a holiday spread.
