Ingredients

General Tso’s Sauce

  • 1/3 cup coconut aminos
  • 2 tbsp rice vinegar (substitute apple cider vinegar for grain-free)
  • 2 tbsp chicken broth
  • 1 tbsp blackstrap molasses
  • 1 tsp coconut sugar
  • 1 tsp garlic powder
  • 1/2 tsp ginger powder
  • 2 tsp arrowroot starch
  • Salt and pepper (omit pepper for AIP)

Main Ingredients

  • 1 tbsp avocado oil
  • 1 1/2 cups broccoli florets
  • Salt and pepper to taste
  • 1 lb ground chicken
  • 2 tbsp green onion, sliced
  • 3 cups cauliflower rice (cooked) or steamed rice

Instructions

  1. Prepare the sauce: In a bowl, combine all the ingredients for the General Tso’s sauce – coconut aminos, rice vinegar, chicken broth, blackstrap molasses, coconut sugar, garlic powder, ginger powder, arrowroot starch, salt, and pepper. Whisk them well until smooth and set aside.
  2. Sauté the broccoli: Heat avocado oil in a large pan over medium heat. Add broccoli florets and sauté for 4-5 minutes, stirring occasionally, until they are lightly crisp but tender. Season with salt and pepper to taste, then remove from the pan and set aside.
  3. Cook the ground chicken: In the same pan, add the ground chicken, breaking it apart with a spatula. Cook over medium heat until fully browned and no longer pink, seasoning lightly with salt and pepper as it cooks.
  4. Combine and thicken: Return the cooked broccoli to the pan with the chicken. Pour the prepared General Tso’s sauce over the mixture, reduce the heat to low, and stir continuously until the sauce thickens and thoroughly coats the chicken and broccoli.
  5. Serve: Divide the cauliflower rice or steamed rice among bowls. Spoon the saucy chicken and broccoli mixture over the rice, then garnish with sliced green onions. Serve immediately for a warm, satisfying meal.
