  • Total Time: 50 minutes
  • Yield: 20 servings

Ingredients

Cake

  • 2 cups (254 grams) all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt
  • 1 3/4 cups (350 grams) light brown sugar
  • 1/4 cup unsulphured molasses
  • 2 sticks (227 grams) unsalted butter
  • 1 cup water
  • 1/2 cup (118 ml) buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract

Frosting

  • 12 ounces (340 grams) cream cheese, at room temperature
  • 1 1/2 sticks (170 grams) unsalted butter, at room temperature
  • 1 1/2 teaspoons vanilla paste
  • 2 1/2 cups (313 grams) powdered sugar, sifted

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 400°F (204°C). Line a 10-by-15-inch jellyroll pan with parchment paper and lightly spray it with nonstick cooking spray to ensure the cake doesn’t stick.
  2. Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, ground ginger, ground cinnamon, baking soda, ground cloves, fine sea salt, and light brown sugar until well combined and evenly distributed.
  3. Heat Wet Ingredients: In a medium saucepan over medium-high heat, combine the unsalted butter, water, and unsulphured molasses. Heat until the butter has fully melted and the mixture comes to a boil. Remove from heat immediately once boiling.
  4. Combine Mixtures: Add the flour mixture to the hot butter mixture and stir well. Allow this to cool slightly to prevent cooking the eggs prematurely.
  5. Add Remaining Wet Ingredients: Once slightly cooled, stir in the room temperature buttermilk, eggs, and vanilla extract until the batter is smooth and homogenous.
  6. Bake the Cake: Pour the batter into the prepared jellyroll pan. Bake in the preheated oven for about 20 minutes or until the cake is cooked through and springs back when lightly touched.
  7. Cool the Cake: Remove the cake from the oven and let it cool completely in the pan before frosting. The cake can be made up to 2 days ahead; cover and store at room temperature.
  8. Make the Frosting: In the bowl of a stand mixer fitted with a paddle attachment, beat the room temperature cream cheese, unsalted butter, and vanilla paste on medium-high speed until completely smooth and creamy.
  9. Add Powdered Sugar: Gradually add sifted powdered sugar to the cream cheese mixture on low speed until fully incorporated and the frosting is smooth and spreadable.
  10. Frost the Cake: Spread the cream cheese frosting evenly over the cooled cake. Cut into squares and serve immediately, or cover and store.
  11. Storage: Once frosted, the cake can be stored at room temperature for a few hours but should be refrigerated if kept longer, for up to 3 days.

Notes

  • For best results, use room temperature eggs, buttermilk, cream cheese, and butter to ensure smooth batter and frosting.
  • If you don’t have vanilla paste, pure vanilla extract is a suitable substitute.
  • Make sure to sift the powdered sugar to avoid lumps in the frosting.
  • You can prepare the cake 2 days ahead of time and frost it on the day of serving.
  • Store any leftover cake tightly covered in the refrigerator to maintain freshness and prevent drying out.
