Ingredients
Cauliflower
- 1 head cauliflower, cut into florets (about 2 lbs or 3-4 cups)
Seasonings and Oil
- 4 tablespoons extra-virgin olive oil (divided)
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Juice and zest of one lemon (about 1 tablespoon zest and 2 tablespoons juice)
- 1/2 teaspoon kosher salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Toppings
- 2 oz. crumbled feta cheese (1/2 cup)
- 2 tablespoons chopped fresh herbs (such as dill, mint, and/or basil)
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the cauliflower.
- Prepare Cauliflower: Place cauliflower florets on a rimmed baking sheet. Drizzle with 2 tablespoons of extra-virgin olive oil and sprinkle with dried oregano, garlic powder, and lemon zest. Toss everything together using your hands or a spoon to coat each floret evenly in oil and seasoning.
- Roast Cauliflower: Roast the cauliflower in the preheated oven for 25 to 30 minutes, tossing once halfway through roasting. Cook until the florets are golden brown and tender.
- Finish and Serve: Remove the roasted cauliflower from the oven and transfer to a serving plate. Sprinkle with crumbled feta cheese and fresh herbs. Squeeze the lemon juice over the top and drizzle with the remaining 2 tablespoons of olive oil before serving.
Notes
- You can substitute fresh herbs based on availability—parsley also works well.
- For a dairy-free version, omit the feta cheese or use a vegan cheese alternative.
