Ingredients
Main Ingredients
- 1 lb lean ground beef
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- ¼ cup onions (red or yellow), diced
- 1 15 oz can black beans, drained
- 1 15 oz can corn kernels, drained
- ½ cup tomatoes, diced
- ¼ cup shredded cheese (cheddar or Mexican blend)
- ½ cup long grain rice, uncooked
Seasonings for Beef
- 1 tsp chili powder
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp salt
- ½ tsp cayenne pepper
Jalapeño Cilantro Sauce
- ⅓ cup sour cream
- 1 jalapeño, sliced, seeds discarded for mild flavor
- ⅓ cup cilantro, fresh
- 1 Tbsp fresh squeezed lime juice
- ½ tsp salt
- ½ tsp cumin
Other
- 2 Tbsp tomato paste
- ¼-⅓ cup water (or broth)
Instructions
- Cook the rice: Start cooking the rice according to package instructions, typically requiring about 20 minutes. This will be the base of your burrito bowls.
- Brown the ground beef: Heat a large deep skillet over medium-high heat and add the ground beef. Cook for approximately 4 minutes until browned. Drain excess grease by soaking it up with paper towels; leaving a small amount of grease helps thicken and flavor the sauce.
- Season and simmer the beef mixture: Add the chili powder, garlic powder, onion powder, paprika, cumin, salt, cayenne pepper, tomato paste, diced onions, and diced bell peppers to the skillet. Pour in ¼ to ⅓ cup water or broth. Cover the skillet and reduce heat to low, letting it simmer gently for 6-8 minutes. Check the consistency; if too runny, simmer uncovered until desired thickness is reached.
- Prepare the Jalapeño cilantro sauce: In a small blender or food processor, combine the sour cream, jalapeño slices (seeds discarded for mildness), cilantro, lime juice, cumin, and salt. Blend until mostly smooth and creamy, perfect for drizzling over the burrito bowls.
- Assemble the burrito bowls: Begin with a scoop of cooked rice in each bowl. Top with the beef and vegetable mixture, followed by corn, black beans, diced tomatoes, and shredded cheese. Finally, drizzle a generous spoonful of the Jalapeño cilantro sauce on top. Serve immediately and enjoy!
Notes
- Use lean ground beef for a healthier version and better sauce consistency.
- If you prefer more spice, keep the jalapeño seeds in the sauce.
- Substitute sour cream with Greek yogurt for a tangier, healthier sauce.
- Leftover beef mixture can be stored in the fridge up to 3 days.
- Use vegetable broth instead of water for enhanced flavor when simmering the beef.
- Feel free to add avocado slices or chopped green onions as additional toppings.
