Ingredients
Vegetables
- 4 cups broccoli crowns (coarsely chopped)
- 7 large garlic cloves (thinly sliced & divided)
- 1 medium onion (finely chopped)
- 2 pounds baby potatoes (4-5 cups, cut into even sizes)
- 2 green onion sprigs (finely chopped)
Meat
- 1 pound ground turkey (lean)
Liquids & Seasonings
- 1/3 lemon (juice of)
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup chicken broth (low sodium)
- 3 tablespoons soy sauce (I used Bragg liquid aminos)
- 2 tablespoons avocado or coconut oil (divided)
Instructions
- Preheat and cook broccoli: Preheat a Dutch oven or large deep skillet over medium-high heat. Add 1 tablespoon of oil, 5 sliced garlic cloves, and broccoli. Cook for 4 to 5 minutes, stirring occasionally, until the garlic and broccoli develop some char on each side.
- Season and set aside broccoli: Drizzle the broccoli and garlic with lemon juice, then sprinkle with salt and black pepper. Stir to combine, transfer the mixture to a medium bowl, and set aside.
- Sauté onion and remaining garlic: Return the Dutch oven to medium heat and add the remaining 1 tablespoon of oil. Add the remaining 2 sliced garlic cloves and chopped onion. Sauté for about 2 minutes, stirring frequently until softened and fragrant.
- Cook ground turkey: Add the ground turkey to the onion and garlic mixture. Cook for 5 minutes, breaking the meat into pieces and stirring occasionally until the turkey is browned and cooked through.
- Add potatoes and liquids: Stir in the baby potatoes, chicken broth, and soy sauce gently to combine all ingredients. Bring the mixture to a boil, then cover the skillet, reduce heat to low-medium and cook for about 20 minutes until the potatoes are tender. Check occasionally and cook longer if needed.
- Finish with broccoli and green onions: Once the potatoes are cooked, add the previously cooked broccoli and chopped green onions back into the skillet. Stir gently to combine and heat through. Serve the skillet hot.
Notes
- Use a heavy-bottomed Dutch oven or large deep skillet with a lid to ensure even cooking and heat retention.
- Baby potatoes should be cut into uniform sizes to cook evenly.
- Adjust soy sauce quantity according to your salt preference or use a gluten-free soy sauce alternative if needed.
- For a spicier version, add red pepper flakes during the sauté step.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated on the stovetop or microwave.
