Ingredients
Dry Ingredients
- 1/2 cup (50g) rolled oats
- 1 teaspoon aluminum-free baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
Wet Ingredients
- 3 small or 1 to 1 1/2 medium (170g) cooked beetroot
- 3/4 cup (120g) no-salt-added chickpeas, rinsed and drained
- 1/2 cup (125g) smooth peanut butter, at room temperature
- 1 1/2 medium (170g) ripe banana
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking.
- Process Oats: Place the rolled oats into a food processor or blender and pulse until they reach a fine, flour-like consistency. This helps integrate them smoothly into the batter.
- Blend Ingredients: Add the cooked beetroot, chickpeas, smooth peanut butter, ripe banana, baking powder, baking soda, and cinnamon into the blender with the oat flour. Blend everything until the mixture is smooth and well combined.
- Fill Muffin Pan: Spoon the batter evenly into a muffin pan, filling each cup about halfway to allow room for rising.
- Bake the Muffins: Place the muffin pan into the preheated oven and bake for 20-25 minutes. To test doneness, insert a toothpick into the center of a muffin — it should come out clean.
- Cool Muffins: Allow the muffins to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. This helps them set and makes for easier handling.
Notes
- Storage: Store baked muffins in an airtight container in the refrigerator for up to 3 days or freeze for up to one month.
- Make sure the beetroot is cooked and soft for easy blending and better texture.
- Check allergies before serving, especially with peanut butter.
- The muffins are naturally sweetened by banana and beetroot, avoiding added sugars perfect for babies.
