Instructions
- Mix dry ingredients: In a bowl fitted with a lid, combine oats, chia seeds, instant coffee, cocoa powder, vanilla bean paste, and a pinch of salt. Stir them well to evenly distribute all the dry components.
- Add soy milk: Pour 1 cup of soy milk over the oat mixture and stir thoroughly. Cover the bowl with the lid and refrigerate for at least 2 hours or overnight to allow the oats and chia seeds to soak and soften.
- Assemble the oats: Once the oat mixture is ready, transfer it into one or two jars or serving containers depending on whether you want to split it into two portions.
- Add Greek yogurt: Spoon ½ cup of Greek yogurt on top of the soaked oats, creating a creamy layer that complements the coffee-cocoa flavors.
- Finish with dusting: Combine ½ teaspoon each of cinnamon and cocoa powder in a fine mesh sieve. Gently tap the sieve to dust the powder mixture evenly over the yogurt layer. Refrigerate until ready to eat or enjoy immediately.
