  • Total Time: 30 minutes
  • Yield: 3 servings

Ingredients

Steelhead Trout and Glaze

  • 2 lb. Steelhead Trout Filet
  • 1/4 cup Honey
  • 1/4 cup Brown Sugar
  • 1/2 cup Balsamic Vinegar
  • 1 tbsp. White Vinegar
  • 1 tbsp. Minced Garlic
  • 1 tsp. Lemon Juice
  • 1 tsp. Sea Salt (divided)
  • 1/4 tsp. Black Pepper
  • 1/4 tsp. Creole Seasoning

Vegetables

  • 1 lb. Broccoli Florets
  • 1 tbsp. Olive Oil
  • 1/4 tsp. Oregano

Instructions

  1. Preheat and Prepare Skillet: Preheat your oven to 400°F (200°C). Grease a cast-iron skillet with butter or olive oil to prevent sticking and to add flavor.
  2. Season the Fish: Slice the steelhead trout into equal portions. Season the fillets with 1/2 tsp sea salt, black pepper, and Creole seasoning. Place the seasoned fish into the prepared oven-safe skillet and set aside.
  3. Make the Honey Balsamic Glaze: In the same pan, combine honey, balsamic vinegar, lemon juice, white vinegar, brown sugar, and minced garlic. Cook over low heat for 5 minutes, then increase to medium heat and continue cooking until the mixture thickens slightly, about 5 to 10 minutes. Remove from heat and let it cool briefly.
  4. Glaze the Trout: Pour the thickened honey balsamic glaze evenly over the steelhead trout fillets in the skillet, coating them thoroughly.
  5. Prepare the Broccoli: Toss the broccoli florets with olive oil and 1/2 tsp of salt to season.
  6. Add Broccoli and Oregano: Place the broccoli in the same skillet alongside the fish. Sprinkle oregano over both the fish and broccoli for added flavor.
  7. Bake: Place the skillet in the preheated oven and bake for 10 minutes or until the fish is cooked through and the broccoli is tender-crisp.

Notes

  • Use an oven-safe cast-iron skillet or a similar heavy oven-safe pan for best results.
  • Adjust cooking time if your fish fillets are thinner or thicker than average.
  • Broccoli can be swapped for other vegetables like asparagus or green beans if preferred.
  • Letting the glaze cool slightly before pouring helps it thicken and adhere better to the fish.
  • The dish is best served immediately while warm and fresh.
