Ingredients
For the Sauce
- 1/2 cup mild harissa
- 1/4 cup honey
- 2 cloves garlic, minced
Main Ingredients
- 1 large chicken breast, diced into 1 inch cubes
- 1/2 pound green beans, trimmed and cut in half
- Salt and pepper, to taste
- 1-2 tablespoons avocado or olive oil
Instructions
- Prepare the sauce: In a medium bowl, whisk together the mild harissa, honey, and minced garlic until well combined. Set this flavorful sauce mixture aside to be added later.
- Cook the chicken and green beans: Heat 1-2 tablespoons of avocado or olive oil in a large skillet over medium-high heat. Add the diced chicken breast to the skillet and brown on all sides. Then, add the trimmed and halved green beans to the skillet. Cook together until the chicken is cooked through and the green beans are bright green yet still crisp, which should take about 4-5 minutes.
- Add the sauce and simmer: Pour the prepared honey harissa sauce mixture into the skillet with the chicken and green beans. Reduce the heat to medium-low and stir everything to incorporate the sauce evenly. Let the mixture simmer gently for 3 minutes to allow the flavors to meld.
- Season and serve: Taste and season with salt and pepper to your preference. Serve the honey harissa chicken and green beans on their own or over a bed of white rice if desired for a complete meal.
Notes
- You can adjust the heat level by choosing mild, medium, or hot harissa depending on your spice tolerance.
- Olive oil or avocado oil works best for cooking to keep the dish light and flavorful.
- For a gluten-free meal, serve with rice or a gluten-free grain.
- Make sure not to overcook the green beans to retain their crunch and bright color.
- Leftovers can be refrigerated for up to 2 days and reheated on the stovetop.
