  • Total Time: 20-24 minutes
  • Yield: 4 servings

Ingredients

Citrus Salsa

  • 2 large oranges, peeled and chopped
  • 1 large avocado, pitted and chopped
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, deseeded and finely minced
  • 2 tablespoons fresh lime juice
  • Kosher salt and black pepper, to taste

Honey Mustard Glaze

  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • Kosher salt and black pepper, to taste
  • Dash of crushed red pepper flakes

Salmon

  • 4 salmon fillets, about 6 oz each
  • Drizzle of olive oil
  • Lemon wedges, for serving
  • Pomegranate arils, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with aluminum foil for easy cleanup.
  2. Prepare Citrus Salsa: In a medium bowl, combine the chopped oranges, avocado, red onion, cilantro, minced jalapeño, fresh lime juice, and season with kosher salt and black pepper to taste. Stir gently to combine the ingredients and set aside to allow the flavors to meld.
  3. Make Honey Mustard Glaze: Whisk together honey, Dijon mustard, minced garlic, paprika, kosher salt, black pepper, and crushed red pepper flakes in a small bowl until smooth and well combined.
  4. Prepare Salmon Fillets: Arrange the salmon fillets skin side down on the prepared baking sheet. Pat the fillets dry with paper towels, drizzle lightly with olive oil, and season with salt and pepper. Then, spoon the honey mustard glaze evenly over each salmon fillet.
  5. Bake Salmon: Place the baking sheet in the preheated oven and bake the salmon for 10 to 14 minutes, or until it flakes easily with a fork. Baking time depends on the thickness of the fillets. For extra crispiness, broil the salmon for 1 minute at the end of baking.
  6. Serve: Remove the salmon from the oven and immediately squeeze fresh lemon juice over each piece. Top with a generous portion of the citrus salsa and garnish with pomegranate arils if desired. Serve immediately while warm and fresh.

Notes

  • The citrus salsa can be prepared ahead and refrigerated, but add the avocado just before serving to prevent browning.
  • If you prefer more heat, leave some seeds in the jalapeño or add more crushed red pepper flakes to the glaze.
  • Salmon thickness affects cooking time; adjust accordingly to avoid overcooking or undercooking.
  • Using fresh lemon juice brightens the flavor and balances the richness of the salmon and glaze.
  • Pomegranate arils are optional but add a nice pop of flavor and color to the dish.
