  • 1 onion, diced
  • 6 garlic cloves, minced
  • 4 cups chicken broth
  • 24 oz marinara sauce

  • 8 lasagna noodles, broken into bite-sized pieces (gluten free if preferred)
  • 1-2 cups baby spinach (optional)

Instructions

  1. Sauté the beef: Turn on the Instant Pot to SAUTÉ mode and let it heat up. Add the ground beef and cook, stirring frequently, until mostly browned, about 6-8 minutes. Then add the diced onion and minced garlic, sautéing until fragrant and translucent.
  2. Deglaze the pot: Turn off the Instant Pot. Add a small amount of chicken broth to the pot and use a wooden spoon to scrape and deglaze the bottom, loosening any browned bits to prevent burning.
  3. Add liquids and seasonings: Pour in the remaining chicken broth, marinara sauce, Italian seasoning, salt, and pepper. Stir to combine.
  4. Add noodles and cook: Submerge the broken lasagna noodles under the liquid mixture. Close the lid securely and set the Instant Pot to MANUAL (Pressure Cook) on high for 3 minutes. It will take about 20 minutes to build pressure before cooking.
  5. Release pressure and add spinach: When the timer beeps, perform a quick release of the pressure immediately. Open the lid, stir in the baby spinach until wilted, and adjust seasoning to taste.
  6. Serve: Ladle the soup into bowls and garnish generously with ricotta, shredded mozzarella, grated parmesan, and parsley flakes. Serve warm and enjoy your comforting lasagna soup.
