This Japanese Sesame Sauce, also known as Goma Dare, is a flavorful and nutty dressing made from toasted sesame seeds combined with rice vinegar, soy sauce, sesame oil, and a hint of ginger. Perfect as a dipping sauce for vegetables, a dressing for salads, or a marinade, it offers a balanced blend of sweet, tangy, and savory tastes with a creamy texture from the ground sesame seeds.

Ingredients

Sesame Base

  • 1 ½ tablespoons white sesame seeds, or pre-toasted

Liquid Ingredients

  • 2 tablespoons unseasoned rice vinegar
  • 1 ½ tablespoon soy sauce
  • 1 tablespoon roasted sesame oil
  • 1 tablespoon neutral flavoured vegetable oil

Additional Flavors

  • 3 teaspoons brown sugar
  • 2 teaspoons finely minced ginger

Instructions

  1. Toast the Sesame Seeds: If not already toasted, heat the white sesame seeds in a dry pan over medium heat, shaking frequently until they turn golden and emit a nutty, popcorn-like aroma.
  2. Grind the Seeds: Use a spice grinder, mini food processor, or mortar and pestle to finely grind the toasted sesame seeds into a powder.
  3. Combine Ingredients: Add the ground sesame seeds into a jar or small bowl, then add rice vinegar, soy sauce, roasted sesame oil, vegetable oil, brown sugar, and finely minced ginger.
  4. Mix or Shake: Shake the jar vigorously or stir vigorously in the bowl to thoroughly combine all ingredients.
  5. Adjust Consistency (Optional): If desired, add more sesame seed powder to thicken the sauce, enhancing nuttiness and reducing tanginess.
  6. Serve or Store: The sauce is ready to use immediately as a dressing, dip, or marinade. Store refrigerated for up to a week.
