Ingredients

For the Kofta

  • 1 tablespoon neutral oil (divided)

  • 1 teaspoon minced (or ground) ginger
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 pound ground lamb
  • ½ bunch finely chopped parsley (about 1/4 cup)
  • 1/4 bunch finely chopped mint leaves (about 2 tablespoons)
  • Salt and cracked black pepper to taste

  • Basmati rice (cooked, for serving)
  • Romaine lettuce, cucumber, and tomato side salad

Instructions

  1. Sauté aromatics: Place a small skillet over medium-high heat. Once hot, add 1 teaspoon of neutral oil. Add the minced shallot, garlic, and fresh ginger (if using) to the skillet and sauté for 4 to 5 minutes until fragrant and softened.
  2. Add spices: Stir in cumin and coriander, along with dry ground ginger if using, and continue to sauté for an additional minute. Lightly season with salt and pepper. Remove the shallot mixture from heat and allow it to cool slightly for about 10 minutes.
  3. Combine kofta ingredients: In a large mixing bowl, combine the ground lamb, sautéed shallot mixture, chopped parsley, and mint. Season generously with salt and cracked black pepper.
  4. Mix thoroughly: Use your hands or a spoon to mix the ingredients together until fully incorporated, ensuring an even distribution of herbs and spices.
  5. Shape the kofta: Divide the lamb mixture into 6 equal portions. With wet hands, form each portion into a 1 ½” by 7” log. Press a skewer into the center of each log, shaping the meat securely around the skewer, leaving about a 4” handle at the bottom and a 1” handle at the top for easy grilling.
  6. Grill the kofta: Preheat a large grill pan over medium-high heat. Once hot, brush the remaining oil on the grill surface. Place the skewers about 1” apart on the pan. Grill each side for 6 to 8 minutes, or until the lamb is cooked through with visible grill marks.
  7. Serve: Remove the kofta from the heat and transfer to a serving platter. Serve over a bed of basmati rice alongside a fresh romaine, cucumber, and tomato salad, and your choice of hummus.
