This Lemon Baked Oats recipe is a quick and nutritious breakfast option combining wholesome oats with fresh lemon zest and juice, baked to perfection in an air fryer. Topped with a tangy lemon yogurt glaze, it offers a delightful balance of flavors and textures in just minutes.

  • Total Time: 12-14 minutes
  • Yield: 1 serving

Ingredients

Oats Mixture

  • 1/2 cup oats
  • 1 egg
  • 1/3 cup milk
  • 1 tbsp sweetener (or sugar)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp baking powder

Lemon Glaze

  • 2 tbsp Greek yogurt
  • 1 tbsp sweetener or sugar
  • 1 tbsp lemon juice

Instructions

  1. Blend Ingredients: Add all of the oats mixture ingredients into your blender and blend for 30 seconds until fully combined into a smooth batter.
  2. Air Fry the Oats: Pour the blended oats mixture into a greased ramekin or small baking dish. Place it into your air fryer basket and bake at 175°C (350°F) for 8-10 minutes, or until the oats are fully cooked through and set.
  3. Prepare Lemon Glaze: While the oats bake, mix together the Greek yogurt, lemon juice, and sweetener of your choice in a small bowl until smooth and creamy.
  4. Serve: Remove the baked oats from the air fryer, top generously with the prepared lemon yogurt glaze, and serve immediately for a fresh, tangy breakfast treat.

Notes

  • You can substitute the sweetener with honey, maple syrup, or your preferred sugar alternative.
  • If you don’t have an air fryer, you can bake the oats in a conventional oven at 175°C (350°F) for about 12-15 minutes.
  • Use full-fat Greek yogurt for a richer taste or a low-fat version for fewer calories.
  • Ensure the ramekin or baking dish fits comfortably inside your air fryer basket before starting.
  • Adjust lemon juice and zest amounts to suit your taste preference for tanginess.
