Instructions
- Blend Ingredients: In a high-speed blender, combine the coconut milk, cottage cheese or Greek yogurt, maple syrup or honey, vanilla bean paste, lemon juice, lemon zest, and turmeric (if using). Blend until the mixture is smooth and creamy, ensuring all elements are fully incorporated.
- Mix with Chia Seeds: Pour the lemon cream mixture into a bowl containing the chia seeds. Stir well to evenly distribute the chia seeds throughout the lemon mixture, allowing them to start absorbing the liquid.
- Refrigerate to Set: Cover the bowl and place it in the refrigerator for at least 2 hours, preferably overnight. This resting time allows the chia seeds to swell and absorb the liquid, creating a pudding-like consistency.
- Serve and Enjoy: Once set, serve the lemon chia pudding chilled. Top with your favorite toppings such as fresh berries, nuts, or additional lemon zest for added flavor and texture.

- For a vegan option, use maple syrup or another plant-based sweetener instead of honey.
