  • 2 red, yellow, or orange bell peppers, cut into -2-inch pieces

Instructions

  1. Prepare Yogurt Marinade and Sauce: In a bowl, whisk together ½ cup thick plain yogurt, ¼ cup tahini paste, 2 tablespoons extra virgin olive oil, 2 tablespoons fresh lemon juice, 2 tablespoons cold water, 2 teaspoons grated garlic, 1 teaspoon ground cumin, 1 teaspoon dried oregano, ¾ teaspoon kosher salt, and ¼-½ teaspoon cayenne pepper until smooth. Refrigerate if preparing ahead, stirring in cold water if the sauce thickens.
  2. Prep Chicken and Vegetables: Cut 1½ pounds boneless chicken pieces and vegetables (zucchini and bell peppers) into chunky 1½-2-inch pieces. Keep cherry tomatoes whole for threading onto skewers.
  3. Marinate Chicken: Toss chicken pieces in a large bowl with ½ cup of the prepared marinade, a pinch of kosher salt, and freshly ground black pepper. Marinate for 15 minutes at room temperature or up to 6 hours refrigerated.
