Ingredients
Main Ingredients
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion, chopped
- 1 green bell pepper (Anaheim or Holland peppers can be used), cored, seeded, and chopped
- Kosher salt, to taste
- 2 vine-ripe tomatoes, chopped
- 3 tablespoons tomato paste
- Black pepper, to taste
- ½ teaspoon dried oregano
- 1 teaspoon Aleppo pepper, plus more for garnish
- 4 large eggs, beaten
- Crushed red pepper flakes (optional, for added spice)
- 1 French baguette, thickly sliced (optional, for serving)
Instructions
- Heat the oil and sauté vegetables: In a 10-inch skillet over medium heat, warm 2 tablespoons of extra virgin olive oil. Add the chopped onions and green peppers, season with kosher salt, and cook for 4 to 5 minutes, stirring regularly until they soften without browning.
- Add tomatoes and seasonings: Stir in the chopped vine-ripe tomatoes and tomato paste. Season the mixture with additional kosher salt, black pepper, dried oregano, and Aleppo pepper. Continue cooking over medium heat for 5 to 7 minutes, stirring occasionally until the tomatoes soften but maintain their shape.
- Cook the eggs: Push the tomato and pepper mixture to one side of the skillet. Reduce the heat to medium-low, pour the beaten eggs into the empty space, and cook briefly. Stir gently as needed until the eggs are just set but still soft.
- Combine and finish: Fold the tomato mixture into the cooked eggs gently to combine. Drizzle a bit more extra virgin olive oil and sprinkle with additional Aleppo pepper and crushed red pepper flakes if desired.
- Serve: Serve the Menemen immediately while hot, accompanied by thick slices of fresh French baguette for dipping and enjoying the rich, flavorful sauce.
Notes
- Use ripe, flavorful tomatoes for the best taste.
- Aleppo pepper can be substituted with sweet paprika or crushed red pepper flakes if unavailable.
- Adjust the amount of crushed red pepper flakes to your preferred spice level.
- This dish is best enjoyed fresh as the eggs can lose their soft texture if reheated.
- For a vegetarian diet, this recipe is appropriate, but it is not vegan due to eggs.
